Kokum Sarbat







Kokum Sharbat is a sweet and tangy drink made from the fruit Kokum. It can also be called Kokum Juice in english.
Kokum is dark purple in color and has a sticky surface with curled edges. The fruit dried and is usually available in the market as a dried rind. When Kokum spice is added to food, it gives it a natural pink- purplish color and gives it a tangy sweet-sour taste.
The kokum is native to the western coastal regions of southern India. It is widely used in the regional cuisines of Gujarat, Maharashtra and several South Indian states. Kokum has the same sour taste as that of tamarind. Kokum is especially used with fish and coconut curries or vegetable dishes . It is also an ingredient in many chutneys and pickles. Kokum Sharbat is a health drink as it absorbs heat of your body & gives you instant energy. It gives respite from indigestion too. It is rich in taste and provides an excellent alternative to the not so healthy synthetic soft drinks.









Ingredients:-



  1. 4 cups ripe red Kokum or Amsool (Aamsool or Kokum is a fruit which is available in the Gujrat, Maharashtra and several southern states of India.)

  2. 5 cups Sugar

  3. 1/4 tsp Black salt

  4. 1/4 tsp fresh roasted Cumin powder

  5. 1 tsp Salt










Method to prepare Kokum Concentrate




  1. Wash and clean the kokums. Cut them into half.

  2. Mix the kokums and sugar in a dry bowl.

  3. Place this mixture in a dry glass jar. Let this sit in the sun for 15 days. A red syrup should form.

  4. Drain out the kokum sugar syrup.

  5. Add cumin powder, black salt and salt and stir well. Adjust sugar if needed.




To make a glass of Kokum Sarbat




  • In a glass pour 1/4th cup of Kokum concentrate.

  • Top it up with ice cold water. Mix well.

  • Serve chilled.
