Sambharam

A south Indian form of Lassi, Sambharam is a favorite beverage of Kerala. It is made of curd, salt and water mixed with curry leaves and dry ginger. This is a cooling agent and reduces heat from the body. In Kerala, it is customary to serve a tall glass of cool Sambharam to entertain guests.

Ingredients:-

  1. 1 cup buttermilk

  2. 2 cups water

  3. 2 small green chilies

  4. 1 inch slice of peeled fresh ginger

  5. salt

Directions:-

  1. Mix buttermilk and water. You can adjust the amount of water according to your taste. Keep aside.

  2. Grate ginger.

  3. Cut green chilies finely. Use less if you are not a spice freak!

  4. Mix ginger and green chilies and crush them together using a dough rolling pin.

  5. Add the crushed mix to the buttermilk.

  6. Add salt to taste and beat the drink using an egg-beater.

  7. Serve chilled.
