kharbooj Sharbat






Kharbooj Sharbat (Honeydew Melon)is of of the finest chilling drinks in summer, liked by millions India and specially kids. the precautions which should be taken while making this type of dink is that all ingredients taken (specially melon ) should be fresh and healthy, due to the fact that when such drinks are made in unhygienic conditions or with unhealthy fruits may lead to deceases.










Ingredients:




  1. 4 small or 2 large Honeydew Melons (Kharbooja)
  2. 1/2 cup strained fresh Orange Juice (Santra Ka Raas)
  3. 1/4th cup fresh Lemon Juice (Nimbu Ka Raas)
  4. 4 drops Khus Essence














Process:









  • If using small melons, slice off the top of each as a lid, if using large melons, cut them into half.
  • Cut the edges into zigzag pattern.
  • Cut a thin slice off the bottom so that the melon stands upright without tipping (take care not to cut through the shell).
  • Scoop out the seeds and discard.
  • Scoop out the flesh and process in a blender, along with the remaining ingredients, until smooth.
  • Chill well and serve in the shells, if desired, with reversed lids and a straw.

Angoor Sharbat






Angoor sharbat is one of the fantasies of the east which is now becoming famous in Indians, Angoor Sharbat is one of the chilling sweet recipes famous in the hot season when grapes are available in penty, nutritious and tasty and surely loved by kids. one can chose the variety of grapes either green grapes or the black one. however in early Indian era this drink was associated with people of high income group thus was considered royal but now this is becoming common throughout Indian sub continent and which is available throughout the year. Ready made mixtures of angoor sharbat gives a strong fight to the house-handmade sharbat, however it should be mentioned that every time you make it yourself, you will enjoy more and more









Ingredients:









  1. 1/2 x 3-inch piece of Orange Zest



  2. 1/4 tsp Cardamom Seeds (Elaichi)



  3. 4 whole Cloves (Lavang)



  4. 6 cup Grape Juice (Angoor Ka Raas) (Sweet)



  5. 1/4th cup Honey (Shahad)



  6. 3-inch piece of Cinnamon (Tuj/Dalchini) Stick



  7. 2 cup sparkling Water










Process:






  • Tie the zest, cardamom seeds and cloves in a small piece of cheese cloth



  • Place the juice and honey in a large stainless steel pan and bring it to near the boiling point over moderate heat.



  • Remove the pan from the heat, add the spice bag and cinnamon stick, cover, and set aside until the juice has cooled to tepid



  • Remove the spice bag and cinnamon stick and chill.



  • Add the water before serving.

Gulab Sharbat




Sharbat can be said as a regular soft drink of the Indian continent specially prepared in the summer month, brings a cooling effect and also replenishes the body with salt and sugar. Gulab sharbat is famous for its aroma and unique taste, so let learn how to prepare Gulab sharbat





Ingredients:






  1. 11/2 cup freshly picked Rose Petals (Gulab Ke Patti)



  2. 3/4 cup boiling Water



  3. 1/4th tsp Cardamom Seeds



  4. 3/4th cup Sugar (Cheeni)



  5. 1/4th cup strained fresh Lemon Juice (Nimbu Ka Raas)



  6. 2/3rd cup Pomegranate Juice



  7. 5 cup cold Water



How to make gulab sharbat:







  • Crush the rose petals with mortar and pestle and place them in a large bowl।



  • Add the boiling water, then pour the mixture to a metal container and add cardamom seeds। set aside for 8 hours or overnight.



  • Pour the rose-cardamom water through a muslin lined strainer set over a bowl



  • Add the sugar, and float the bowl over a hot water filled sink until the sugar dissolves



  • Remove from the hot water and filter it again।



  • Cool it to room temperature



  • Combine all the ingredients in a pitcher and stir well.



  • Serve in a glass half filled with crushed ice.

Khus Sharbat




Khas sharbat is one of the coolest drinks which are naturally available, specially taken in very hot summers the drink is also famous for its aroma, specially liked by outside working persons, so lets gear up to prepare some Khus Sharbat.....




Ingredients:




  1. Water: 2¼ Cups


  2. Sugar: 4 Cups


  3. Fresh Lime juice: ¼ Cup


  4. Khus essence: 1¼ teaspoon


  5. Green Food color: 1 teaspoon (Optional)


Method



Khus Syrup





  • Add water and sugar in a heavy bottom pan. Heat till all the sugar is dissolved


  • Add Lime juice. Bring to boil again.


  • Turn off heat. Let it cool.


  • Stir in Khus essence and color.


  • Bottle it .


Preparation





  • Add 3 parts of water to 1 parts of syrup and serve chilled or with ice.

Mango Lassi



Mango lassi is famous specially in the mango season, has a great taste and nutritious value. The best thing to remember is that every type of mango will give you different taste, as we all know that in India we have several hundred varieties of mango, so you can alter the variety and get a new taste every time.








Ingredient:-



  1. 1 cup ripe, fresh mango (peeled and diced)





  2. 125 ml/1/2 cup plain, natural yogurt





  3. 125 ml/1/2 cup water





  4. 2 tbsp sugar (or as you require )





  5. cup of ice cubes





Process:-



  • Place all ingredients in the jug of an electric blender or food processor and blend until smooth.





  • Pour into chilled glasses and serve immediately.

Pineapple Lassi



Pineapple Lassi is specially loved by south Indians, this type of drink is specially made in southern-region due to surplus availability of pineapples, however this recipe is now becoming famous in north India (limited to high value restaurants) so lets move on to prepare Pinapple Lassi




Ingredient:-







  1. 1 cup plain yogurt



  2. 1/2 cup Pineapple(fresh or canned)



  3. 1 cup crushed ice



  4. 3 table spoons sugar / Use sugar substitute if desired






Process:-





  • Blend all of the above.



  • Add a little water if the consistency is too thick.



  • Keep refrigerated.Serve chilled.



  • Makes 4 servings.

Salty Lassi





Salty Lassi is spiced with cumin and is a great refreshing drink in the summer.



Ingredient:-



  1. 1 tsp cumin seeds



  2. 1 cup plain yogurt



  3. 1 cup chilled milk



  4. 2 teaspoons lemon juice



  5. 1/2 to 1 tsp salt (or as you require )



  6. 1/2 cup of ice cubes










Process:-



  • Take roasted cumin seeds .



  • Cool and grind to a coarse consistency.



  • In a blender blend all the ingredients.



  • Top it up with a dollop of yogurt.



  • Serve chilled or plain.

Lassi




Sweet Lassi is loved by millions not only in India but overseas too thus it is most famous amongst all Lassi's throughout India and world, however the ingredients of lassi remains the same in all shops but believe it or not, to make a good lassi you require an expert hand, additional substances like rabdi, gulab jal or kewada can be added for extra flavour.






Ingredient:-



  1. ½ 1 cup of yogurt

  2. a cup of water

  3. ½ a cup of ice cubes

  4. 3 to 5 teaspoons of sugar(or as you require )

  5. A pinch of salt

  6. A dollop of plain yogurt for garnishing.




Process:-




  • Blend all the ingredients at high speed till frothy.

  • Add a dollop of fresh yogurt on top.

  • Makes two to three glasses of Lassi.

  • Rabdi Can be added (1 part rabdi to 4 parts Lassi)

  • Adding gulab jal or Kewada will give you and extra taste and fragrance.

Pista Shake
























Pistachio Shake is one of best you would love to make and specially your kids will never forget the yummy taste, so lets put on the gears and get ready to make Pista shake.




Ingredients:




  1. 3 tbsp unsalted raw Pistachio (Pista)

  2. 3 1/2 cup Milk (Doodh)

  3. 6-8 Saffron (Kesar) threads

  4. 2 tbsp Sugar (Cheeni) or as desired

How to make pistachio shake:




  • Cut 4 pistachios into silvers and set aside.

  • Place the remaining in a blender, cover, and pulse several time to coarsely grind.

  • Add 1/2 cup milk and blend until smooth.

  • Scrape down the sides of the jar with a spatula to free the nuts.

  • Slowly add another 1 cup milk and blend for 1/2 minute.

  • Place the nut milk, remaining milk and saffron in a heavy- bottom pan over high heat.

  • Stirring constantly, bring to full boil.

  • Froth the milk two more times, then remove it from the flame and stir in a sweetener until dissolved.

  • Place the strainer over the blender and pour in the milk.

  • Partially cover and blend, starting at the low speed and increasing it to high, until the milk is frothing.

  • Pour into cups, sprinkle with pistachio silvers, and serve immediately.

Banana Lassi













Kele Ki Lassi or Banana Lassi or Banana Curd Shake the way you call it, this drink has a high nutrient content some times mango is also used as an additional ingredient for extra sweet taste. This is one of the most precious lassi as far as the taste is considered. One can find this recipe specially in Delhi and adjoining areas being served with parathas.



Ingredients:




  1. 1 cup Curd (Dahi, plain non-fat Yogurt)

  2. 1 peeled and sliced ripe Banana (Kela)

  3. 2 tbsp Sugar to taste

  4. 1/4 tsp Cardamom Powder (Elaichi Powder)

  5. Few Ice-cubes


How to make banana lassi:




  • Combine all ingredients and blend until smooth in a blender.

  • Pour in glasses and serve chilled.

Tarbooj Sharbat












Watermelon juice is just chilling man, can be found specially in the hotter northern parts of India believe it or nor the taste is so good, that your mouth starts watering even if you think of the this shake.

Ingredients:

  1. 1 Pint Strawberries

  2. 3 cup fresh Watermelon Juice (Tarbooj Ka Raas)

  3. 1/2 tsp pureed Ginger (Adrak)

  4. 3 tbsp Sugar (Cheeni)



How to make tarbooj sharbat:





  • Wash and stem the berries in cold water.

  • Force through a food mill to separate seeds from the puree.

  • Alternately place a nylon sieve over a bowl and, using a pestle or outstretched fingers, push to extract the fruit puree, discard the seeds.

  • Combine all the ingredients in a jug, stir well and refrigerate for few hours.

  • Stir and serve in glasses with crushed ice.

Honey-Mint Lemonade












How yummy is this recipe?when its 100 degrees and all you want was a cool glass of lemonade (with a little something something) and this recipe definitely has both. It's the perfect twist to a traditional mojito.















Serves :Two
Ingredients:-


  • 2 cups Water


  • 1/2 cup Honey


  • 1/4 chopped fresh mint 1 cup


  • Fresh lemon juice


  • Sugar


  • Ice
















Method:-


  1. Combine honey and water in saucepan and bring to boil over high heat.(About 3/4 Hours)


  2. Remove from heat.


  3. Add mint and let cool.


  4. Pour liquid through strainer into pitcher and discard mint.


  5. Add lemon juice.


  6. Taste and add sugar to desired sweetness.


  7. Chill.


  8. To serve, fill glasses with ice and pour in lemonade.

Fennel Juice (Sauf)















Has a soothing flavour and taste,but the best thing it will chill you in hot summers



Serves :Two


Ingredients:-




  • sauf 6 tbs



  • sugar 5tbs



  • water 2 glass



  • ice cubes 3-4



  • elaichi powder 1 pinch



  • khus khus 1tsp



  • mint leaves to garnish 2-3
























Method:-

  1. Grind sauf, elaichi powder, khus khus to fine powder.



  2. take 2 glass water in a jug.



  3. add the ground powder, sugar.



  4. stir well till sugar dissolves.



  5. strain in a fresh glassserve with ice cubes and garnish with mint leaves

Mixed Vegetable Juices

ABC juice

Apple Beetroot Carrot shake
















Serves: Two
Ingredients:-


  • 3 apples

  • 3 beetroot

  • 3 carrots

  • Salt (as required)*

  • Chat masala*














Method:-



  • Cut all of the fruits and vegetables into pieces. Make sure that they can fit through your juicer.

  • Add each piece, one by one, and get all of the liquid out as much as possible.

  • You can do it in bunches or groups of vegetable/fruit.

  • Take the liquid from your fruit and vegetables and serve it into a glass.

*Chat masala or salt can be added as one requires.

Apple Lychee shake










It is so debilitating that you actually considered going to a mall just to enjoy some free airconditioning! I wonder if one burns more calories just by being so hot, sweaty and bothered. One would think that the oppressively warm weather would dampen one’s appetite, but I don’t think it has affected your's… However, in the midst of writing a post on pepper, you must set the unfinished post aside and decided to do this one on a cool chilly buko apple-lychee shake instead.














Ingredients:-

  1. gold coin[apple] juice -100ml

  2. fresh lychee pureed -50ml

  3. fresh grape juice -50ml

  4. soda-50ml

  5. vanilla icecream-2 scoops,














Method:-


  • take 4 tall glasses pour grape juice in each glass top it with lychee puree

  • add gold coin each should form a layer

  • then add 1/2scoop of vanilla icecream

  • finally fill the glass with soda serve immedietly

  • chill all the juice before serving

  • garnish with finely chopped apple and lychee

Iced Mango Tea














This is one of the exciting drinks that you would like to make and enjoy as well. It is really simple and chilling it tastes great and new tastes could be developed every time you change the variety of mango (as you know hundreds of variety are grown in India)
















Ingredients:-

  1. Raw mango pieces-1/2 cup approx.


  2. Sugar-2 Tsp.


  3. Tea-a tsp.


  4. soda-1 bottle

  • Ice-as per required
















Method:-

  • Blend mango, sugar and ice together.


  • Make tea by adding 1 tsp tea in a cup of boiling water and then allow to cool it.


  • Mix this tea with blend of mango.


  • Fill 2 long glasses with crushed ice.


  • Pour blended ingredients on to it up to half of the empty portion of the glasses.


  • Pour soda in glasses just before to serve.


  • Serve chilled.

Bel (Wood Apple) Sharbat









Of all the juicy fruits flooding the market in summers, bel is perhaps the richest in medicinal properties. The fruit is full of pulp and seeds and weighs up to two kgs. But the numbers of this beneficial tree are declining fast. Every part of the tree, from the bark, roots, leaves, flowers, fruits to the seeds are used to treat different ailments by Ayurvedic doctors.
The English called the bel golden apple, wood apple and Bengal quince. Ancient Sanskrit texts refer to it as Vilva and the fruit of prosperity. Lakshmi, the goddess of fortune, is said to reside in the Vilva.















Ingredients:-


  1. Large sized Bel (wood apple)-1,

  2. Sweet curd-8 tbls.

  3. 9 Tbs .Sugar (Or according to your taste)

  4. Powdered small elaichi (green cardamom)-1 tsp

  5. Powdered Cashewnut -2 tbls






Curd can be replaced by milk for a different recepie and taste.




















Method:-


  • Take the pulp out of the Bel (wood apple).

  • Remove the seeds and cover it.

  • Churn the ingredients in the mixer.

  • Add ice cubes and serve

Phalsa Cooler















Ingredents:

  • 1/2 kg phalsa

  • 200 gm sugar

  • 350 ml water soda water ice cubes
























Method:


  • Clean berries.

  • Prepare sugar syrup with sugar and water.

  • Boil for five minutes.

  • Add the berries and allow to steep overnight.

  • Blend and strain mixture.

  • Combine with soda and ice and serve.

Kokum Sarbat







Kokum Sharbat is a sweet and tangy drink made from the fruit Kokum. It can also be called Kokum Juice in english.
Kokum is dark purple in color and has a sticky surface with curled edges. The fruit dried and is usually available in the market as a dried rind. When Kokum spice is added to food, it gives it a natural pink- purplish color and gives it a tangy sweet-sour taste.
The kokum is native to the western coastal regions of southern India. It is widely used in the regional cuisines of Gujarat, Maharashtra and several South Indian states. Kokum has the same sour taste as that of tamarind. Kokum is especially used with fish and coconut curries or vegetable dishes . It is also an ingredient in many chutneys and pickles. Kokum Sharbat is a health drink as it absorbs heat of your body & gives you instant energy. It gives respite from indigestion too. It is rich in taste and provides an excellent alternative to the not so healthy synthetic soft drinks.









Ingredients:-



  1. 4 cups ripe red Kokum or Amsool (Aamsool or Kokum is a fruit which is available in the Gujrat, Maharashtra and several southern states of India.)

  2. 5 cups Sugar

  3. 1/4 tsp Black salt

  4. 1/4 tsp fresh roasted Cumin powder

  5. 1 tsp Salt










Method to prepare Kokum Concentrate




  1. Wash and clean the kokums. Cut them into half.

  2. Mix the kokums and sugar in a dry bowl.

  3. Place this mixture in a dry glass jar. Let this sit in the sun for 15 days. A red syrup should form.

  4. Drain out the kokum sugar syrup.

  5. Add cumin powder, black salt and salt and stir well. Adjust sugar if needed.




To make a glass of Kokum Sarbat




  • In a glass pour 1/4th cup of Kokum concentrate.

  • Top it up with ice cold water. Mix well.

  • Serve chilled.
